After months of brainstorming, careful planning and the daunting task of searching for the perfect spot to setup a mini restaurant that me and my wife had been dreaming for years. It is finally in place and ready to serve delicious Italian Cuisine and Select various Asian delicacies especially made for health conscious individuals.
Located near the corner of busy avenue with hundreds of establishments, offices and apartments, we are sure to have lots of mouth to satisfy. Thinking about it again I still cannot believe that we were able to get this place. If not with the help of a friend who negotiated with to the owner Mr. Levinsky in my behalf I might still be searching somewhere. It used to be a sports gym but the contract hasn't been renewed for some reason and before the gym was emptied I already signed and made my down payment for a two year renewable contract.
Since the space that the gym used to occupy is small and considering we needed a place for storage we renegotiated with the owner and we got one room which is located in the extension building which is just a feet away on our left. The extension building has a separate entrance but the owner was kind enough to make a hole in the wall to have an entrance to the room made for us. It is accessible from our kitchen and we don't have to get around and enter through the extension building's entrance. The wall was made mainly of bricks bound together by mortar, it was easily done and we had a safe storage room ready to be filled.
The business has been running smoothly for almost a month, gaining popularity by way of one priceless tool, the word of mouth. At that time I thought it will be easy from there on until an employee in charge of waste management got my attention and suggested that we should hire a skip because the garbage bins are too small to accommodate piles of rubbish. There were more excess garbage than the garbage bin can accommodate. It was becoming untidy and pose a great risk to the health of my workers and the cleanliness of the food we serve. If left unresolved it will be bad for the business, I then discussed it with my wife that we hire a skip. She knows better in being clean and she volunteered to do the task in finding where to hire because I was too busy managing the business for almost 12 hours a day and it needed close supervision because it was still young and new.
A few minutes passed three PM on our 27th day in business, I had a call from my wife and she said she has found a private owned company where to hire a skip. It was from a waste collection company who have an office located just three blocks from from our restaurant and my wife made arrangements for a meeting and it was set ten AM the next day. During the meeting I was advised of the rules and regulations which covers the proper segregation and the suitable location for the skip. It is an additional cost in doing business but was necessary not just for the business but for other people as well.
Before I considered hiring a skip, I had an idea of making a custom built large garbage bin only to be told that it will be big, heavy and needs a loader to lift and have it emptied in a truck, it can be done but our city's garbage collection truck doesn't come with a loader. It comes only with lazy hands to pickup and throw and not even bother to pick up the little pieces of trash. Having that in mind it is a good thing to hire a skip and have little to do in managing waste.
Six months have passed and the business went strong and steady. I now have more time with my wife and kids after the early flaws on my business plan was exposed and resolved. This is the kind of life I have always dreamed of, to retire young and be my own boss.
